Cantillon Brewery occupies a 19th-century building on Rue Gheude in the Anderlecht district of Brussels and is one of the last remaining producers of traditional lambic beer within the city limits. The brewery has operated continuously since 1900, using spontaneous fermentation—open coolships on the top floor expose hot wort to wild yeast carried in the night air from October through April. Tours are self-guided through the original copper kettles, oak foeders, and bottling equipment, with a tasting of two to three lambics included in the roughly €10 admission.
